This one is for Fish People…uuuuh “pescatarians.” Credits go to South France. Sauté garlic, champignons, and yellow peppers. Steam courgettes separately. With Kerrygold, heat lachs, then combine all the vegetables. To plate, create a bed of potatoes, then top off with the lachs and vegetables. Sprinkle chopped mint leaves.
