Waking to a cold January morning – especially with scotched brains – demands steaming coffee and something piping hot out of the oven. So I’ve decided to forensicate some baked eggs for a continuation to the previous night’s warmth and coziness of close friends, dinner, cake, red wine, and whiskey. The hardest part is always walking back out into the cold isn’t it?…

Back to Wednesday Eggs! You’ll want two of them, one apple, three potatoes, a few cherry tomatoes, diced garlic, cheese, and fresh herbs of all kinds. Use a shallow pan and it all get’s slammed into the oven until ready.

But make sure to have Neil Young playing off the stereo. Perhaps the Silver and Gold album; otherwise the eggs might not bake quite so perfectly. Or taste so glorious with the earthiness of herbs spicing through the potatoes and working deliciously with the apples. A café allongé goes remarkably well.
