Today is celebration of International Sick Day. Together we shall fight off stuffy noses and itchy throats without any help from Chef Boyardee’s dog’s dinner recipes. Dump a ton of sweet potatoes, onions, and garlic, into a pan and sauté with a glob of huile d’olive until onions are golden. Add in some liquid and let steam while you deconstruct the following into minute bits: tomatoes, courgette, basil, zest of lemon, shallots, and ginger. Combine into pot, then add wine vinegar (or stiff red wine), water, milk, Kerrygold butter, pepper, and salt. When ready, serve with chopped almonds and shaved pecorino cheese delicately sprinkled on top.
